This summer, cool down after your workout the same way you cooled down after a day of playing during summer vacation when you were a kid – with a nice, cold Popsicle. These pops are much more nutritious than the ones we all enjoyed as kids; full of protein to repair your muscles, low sugar, healthy fats and antioxidants. Best of all, they taste decadent.
What you’ll need:
approx. 1.5 c unsweetened almond or milk of choice.
2 scoops vanilla protein powder
1/2 c shredded unsweetened coconut
1/3 c cacao nibs
1 tbsp chia seeds
Makes 4 pops
For the coconut layer, combine 2/3 cup of unsweetened almond or cashew milk, 1 scoop of vanilla protein powder and 1/2 c shredded unsweetened coconut flakes in a blender.
Pulse until combined and slightly chunky.
Stir in 1 tbsp chia seeds.
Pour into 4 Popsicle molds filling up halfway. Freeze 30 minutes.
For Cacao Layer, combine 2/3 c almond milk, 1/3 c cacao nibs, 1 scoop vanilla or chocolate protein powder in a blender. Blend until cacao is broken into very tiny bits.
Pour over coconut layer and add sticks in the center of each pop.
Freeze for at least 2 hours.
